- 3 oz. salted anchovy fillets in oil
- 1 tablespoon capers
- 2 cloves garlic , peeled and degermed
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon parsley or basil (optional, chopped
- black pepper

Instructions
- Place the garlic cloves and the parsley or basil (optional) in a mortar and, using a pestle, crush them until obtaining a creamy texture.
- Drain the anchovies.
- Add the anchovies and capers to the mortar, then continue to pound everything while adding the olive oil gradually.
- The consistency of anchoiade can be either slightly lumpy or smooth and homogeneous.
- Season with black pepper and mix.
- Serve on slices of toasted bread.
