Anchoïade

Anchoïade is a traditional French recipe and specialty made with anchovies, capers, olive oil, and garlic, traditionally pounded in a mortar.

Ingredients

  • 3 oz. salted anchovy fillets in oil
  • 1 tablespoon capers
  • 2 cloves garlic , peeled and degermed
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon parsley or basil (optional, chopped
  • black pepper

  • Mortar and pestle

Instructions

  1. Place the garlic cloves and the parsley or basil (optional) in a mortar and, using a pestle, crush them until obtaining a creamy texture.
  2. Drain the anchovies.
  3. Add the anchovies and capers to the mortar, then continue to pound everything while adding the olive oil gradually.
  4. The consistency of anchoiade can be either slightly lumpy or smooth and homogeneous.
  5. Season with black pepper and mix.
  6. Serve on slices of toasted bread.
