Ingredients

  • 1 cup (150g) Pepperoncini chopped into large cubes
  • 1 cup (150g) cherry tomatoes
  • 1 cup (120g) Fontina cheese
  • 1 cup (120g) Mozzarella bites
  • 1 cup (120g) Sliced cheese
  • 1 cup (150g) Olives
  • 1 cup (130g) Cucumber slices
  • Herb vinaigrette or balsamic glaze

Instructions

  1. Thread the skewers in the following order: cucumber, olives, sliced cheese, cherry tomato, salami, Fontina cheese, and pepperoncini.
  2. Once all skewers are assembled, drizzle them with the herb vinaigrette or balsamic glaze.
  3. Arrange the antipasto skewers on a platter.
  4. Place it in the refrigerator to chill. Serve and enjoy!

Notes

  • Be sure to use sturdy skewers or opt for metal skewers. The skewers need to be able to handle the weight of what you have placed on it.
  • Cut all the ingredients into bite sizes so it is easier for guests to eat.
  • Use different colors, ingredients and textures based on the occasion.
  • Make the skewers ahead of time and keep them in the fridge covered in plastic wrap to maintain the freshness and so that the ingredients don’t dry out.
  • Storage - Store any leftover skewers in an airtight container in the fridge for up to 2 days. If you’ve used softer cheeses like mozzarella, eat them sooner as they may dry out or lose their freshness quicker.
