Apple and cheddar cheese Yorkshire pudding

A tasty twist on classic Yorkshire pudding, these make a great side or snack.

Ingredients

  • 3 tablespoon vegetable oil approx, or a little more, as needed
  • ½ cup all purpose flour 70g plain flour
  • ¼ teaspoon salt
  • 1 egg
  • ½ cup milk
  • ¼ apple peeled, cored and diced into small cubes
  • 3 tablespoon cheddar finely grated - a nice aged one is best

  1. Preheat the oven to 400F/200C.
  2. Generously oil a 6-hole muffin tray and warm it in the oven for a good 15mins (or more) as the oven comes to temperature. Don't skip this step as they won't work properly without it.
  3. Mix together the batter - you can either just mix everything at once, or if you struggle to get a smooth batter, start by mixing the flour and salt then add the egg. Whisk in the egg while adding the milk a little at a time and keep whisking gently until you get a smooth batter.
  4. Once the muffin tray has heated, pour the batter equally between the 6 muffin moulds. Then drop in a few pieces of apple into each. Top each one with ½tbsp of grated cheddar, slightly spread rather than clumped together if possible. Try to do this all quickly, to save the oil cooling too much. Then put the tray back in the oven and bake for approx 25mins until the Yorkshire puddings are well risen and brown.
  5. Carefully remove them from the tray and serve.
