Ingredients

  • 2 apple diced
  • 3 cups arugula
  • ½ cup almonds chopped
  • 1 carrot julienned
  • 1 onion sliced
  • ½ cup goat cheese
Salad Dressing:
  • 2 tablespoons orange marmalade
  • 2 tablespoons Dijon mustard
  • ¼ cup olive oil
  • 2 tablespoons apple cider vinegar
  • salt to taste

Instructions

    Cup of Yum
  1. Blend everything for the dressing in a blender till smooth and creamy.
  2. Put all the ingredients for the salad in a large bowl. Add the dressing and toss well.
  3. Serve immediately.
  4. If serving the salad later, refrigerate the dressing and other ingredients separately. Add the dressing just before serving or the salad will get soggy.
