Salad
- 1 pound shredded brussels sprouts
- 1 medium sliced green apple
- 1 medium sliced red apple
- ½ pound cooked and crumbled bacon
- ¼ cup cranberries
- ¼ cup pumpkin seeds
- ¼ cup goat cheese
Maple Dijon Dressing
- ¼ olive oil
- 2 tablespoons maple syrup
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
Instructions
- In a large bowl add 1 pound shredded Brussels sprouts, 1 medium sliced green apple, 1 medium sliced red apple, ½ pound cooked and crumbled bacon, ¼ cup cranberries, ¼ cup pumpkin seeds, and ¼ cup goat cheese.
- In a separate small bowl, whisk together ¼ olive oil, 2 tablespoons maple syrup, 2 tablespoons apple cider vinegar, and 1 tablespoon dijon mustard.
- Pour the dressing over the salad and toss until coated.
