- 1 cup unsalted butter
- 1 cup light brown sugar packed
- 1/4 cup granulated sugar
- 2 large eggs
- 2 Tablespoons maple syrup
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups apples peeled and chopped
For the Maple Cream Cheese Frosting
- 8 oz. cream cheese softened
- 1 cup light brown sugar packed
- 2 Tablespoons maple syrup
Instructions
- Preheat oven to 350° F. Spray a 9x13" baking dish with cooking spray.
- Add the butter to a large heat proof mixing bowl. Melt the butter then let it cool slightly.
- Add the brown sugar and granulated sugar. Mix with an electric mixer or a whisk until well combined.
- Add the eggs, maple syrup, and vanilla. Mix until well combined.
- Add the flour, cinnamon, baking powder, and salt. Mix until no dry flour remains.
- Add the chopped apples. Stir with a spoon or silicone spatula until the apples are evenly incorporated.
- Transfer the batter to the baking dish. Spread it out into an even layer.
- Bake for 25-30 minutes. A toothpick inserted into the center of the blondies should come out with moist crumbs, but no raw batter.
- As the blondies bake, prepare the maple cream cheese frosting. Add the softened cream cheese and brown sugar to a mixing bowl. Mix with an electric mixer or a whisk until well combined.
- Add the maple syrup. Mix until well combined.
- Once the blondies have cooled completely, top them with the frosting. Spread it out into an even layer.
- Slice into 16 pieces.
