Instructions

  1. Preheat oven to 350° F. Spray a 9x13" baking dish with cooking spray.
  2. Add the butter to a large heat proof mixing bowl. Melt the butter then let it cool slightly.
  3. Add the brown sugar and granulated sugar. Mix with an electric mixer or a whisk until well combined.
  4. Add the eggs, maple syrup, and vanilla. Mix until well combined.
  5. Add the flour, cinnamon, baking powder, and salt. Mix until no dry flour remains.
  6. Add the chopped apples. Stir with a spoon or silicone spatula until the apples are evenly incorporated.
  7. Transfer the batter to the baking dish. Spread it out into an even layer.
  8. Bake for 25-30 minutes. A toothpick inserted into the center of the blondies should come out with moist crumbs, but no raw batter.
  9. As the blondies bake, prepare the maple cream cheese frosting. Add the softened cream cheese and brown sugar to a mixing bowl. Mix with an electric mixer or a whisk until well combined.
  10. Add the maple syrup. Mix until well combined.
  11. Once the blondies have cooled completely, top them with the frosting. Spread it out into an even layer.
  12. Slice into 16 pieces.
