Ingredients
- 3 pounds quartered and cored golden delicious apples
- ¾ cup apple cider, or apple juice
- ½ cup packed brown sugar
- ½ tablespoon ground cinnamon
- ¼ teaspoon kosher salt
- ⅛ teaspoon nutmeg
- 1 teaspoon vanilla extract
Instructions
- Place 3 pounds quartered and cored golden delicious apples in a large pot with ¾ cup apple cider, ½ cup packed brown sugar, ½ tablespoon ground cinnamon, ¼ teaspoon kosher salt, and ⅛ teaspoon nutmeg.
- Cook over medium-low heat, covered for 1 hour, stirring every 10 minutes, until the apples are very soft.
- Puree the apples with a hand blender or a high powered blender until smooth. Stir in 1 teaspoon vanilla extract.
- Cook uncovered over low heat for about 1 hour, stirring occasionally (about every 5 minutes) until dark in color.
- Place the apple butter in jars and store in the fridge for up to 3 weeks. Makes about 3 ½ (8-ounce) jars.
