Apple Cake with Macadamias, stir together goodness

This Apple Cake with Macadamias blends diced apples and nuts into a spiced batter featuring cinnamon and ginger for warmth. It yields a moist cake with a slightly dense texture that holds together well in a pan lined with baking paper. Baking at moderate heat ensures even cooking, while topping with sliced apples and extra nuts adds texture and decorative appeal.

Instructions

    Cup of Yum
  1. Set the oven to 180 C /350 F. Line and grease a 20 cm cake tin
  2. Melt the butter first. Set aside
  3. Put the chopped apples into a mixing bowl, big enough to fit all of the ingredients. Add the flour baking powder and soda, sugar and spices as well as the nuts and mix up well .
  4. Break the egg into a cup and beat to break up. Pour into the bowl with the apple and flour mixture add the melted butter and the milk mix well with a spatula or spoon. Add a little more milk ( up to 2 Tablespoons ) if it seems very hard to mix. Mix quite well to make sure it is all incorporated.
  5. Spoon into the prepared cake tin and flatten with a spoon. Garnish with sliced apples painted with a little butter sprinkle with the extra nuts and a little raw sugar if you like. ( I do!).
  6. Bake for 35 to 40 minutes . Test the middle of the cake with a skewer. It should come out clean.

Notes

  • Applying melted caramel sauce as a glaze after baking adds flavor and an attractive finish to the cake.
