  • 1 ¼ cups plain flour (all-purpose) 165g
  • ½ cup polenta cornmeal) 75g, fine
  • 1 tablespoon baking powder
  • ½ teaspoon salt sea salt
  • ¼ teaspoon bicarbonate of soda (baking soda)
  • 1 apple peeled, cored, and chopped into small chunks
  • ¾ cup cheddar cheese 75g grated (I used white cheddar)
  • 1 egg lightly beaten
  • ¾ cup milk whole
  • 1 teaspoon Dijon mustard

Topping

  • 2 tablespoons cheddar cheese grated

Instructions

  1. Preheat oven to 375°F/190°C. Lightly grease the cups of a muffin tray with cooking oil or butter (the cheese could make the muffins stick to paper liners).
  2. In a large bowl, sift in the flour, polenta, baking powder, salt and bicarb of soda. Stir in the apple chunks, and cheese.
  3. In a small bowl, lightly whisk together the egg, milk and mustard.
  4. Pour the milk mixture into the flour mixture and stir to combine.
  5. Spoon the batter into the muffin cups ¾ full. Sprinkle the remaining 2 tablespoons of cheddar over the batter.
  6. Bake for 15-20 minutes or until the muffins have risen and turned a light golden colour.
  7. Allow to cool in the pan for 5 minutes, then remove and cool completely on a wire rack.
