Apple Cinnamon Baked Oatmeal
Apple Cinnamon Baked Oatmeal combines old fashioned oats with cinnamon, baking powder, and diced apples in a milk and applesauce mixture. Baked until golden and set, it results in a warm, comforting dish with a soft texture and subtle sweetness. It's suitable for breakfast or a wholesome snack, and can be topped with whipped cream or other favorites.
Ingredients
- 2 1/4 cups old fashioned oats
- 1 3/4 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 3/4 cups almond milk or milk of your choice, unsweetened vanilla
- 1/2 cup applesauce unsweetened
- 1/3 cup pure maple syrup can use brown sugar or honey
- 2 tablespoons butter slightly cooled, melted, or coconut oil
- 2 egg beaten, large
- 2 teaspoons vanilla extract pure
- 1 cup apple I like Honeycrisp, diced

Instructions
- Preheat oven to 350 degrees F. Grease an 8×8-inch baking dish with nonstick cooking spray and set aside.
- In a large bowl, combine the oats, cinnamon, baking powder, and salt.
- In a medium bowl, combine the milk, applesauce, maple syrup, butter or oil, eggs, and vanilla extract.
- Add the milk mixture to oat mixture; stir well. Stir in the diced apples. Pour the oatmeal mixture into prepared pan and bake for 30 to 40 minutes or until oatmeal is set and golden brown.
Notes
- This recipe can be doubled and baked in a 9x13-inch pan.
