Apple Cinnamon Muffins

Ingredients
- 1 medium apple chopped
- ½ medium apple sliced
- ½ cup yogurt (plain - room temperature)
- 1 tablespoon milk (room temperature)
- 1 large egg (room temperature)
- ¼ cup butter salted (melted & cooled)
- 1 cup cake / pastry flour*
- ⅓ cup + 1 tablespoon brown sugar (80 grams total, if you double the recipe this amount)
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ¾ teaspoon cinnamon
- 1 pinch salt
*Homemade cake flour is very easy to make, for every one cup of all purpose flour remove 2 tablespoons of flour then replace it with corn starch. Sift or whisk together to combine well.
Instructions
- Pre-heat oven to 350F (180C). Grease and flour a medium 6 muffin pan size.
- In a medium bowl mix together the yogurt, milk, egg and melted butter with either a whisk or fork.
- In a large bowl whisk together the cake flour, sugar, baking powder, baking soda, cinnamon and salt.
- Add the yogurt mixture to the flour mixture just until combined (about 15-16 stirs). Fold in the chopped apples.
- Spoon the mixture into the prepared muffin tin. Top with the sliced apples (if desired) and sprinkle with a little cinnamon sugar. Bake for about 20-30 minutes, check for doneness with a toothpick. Let cool or eat warm. Enjoy!

Notes
- This recipe is made for 6 muffins but it can also be doubled.
- For room temperature ingredients, remove from the fridge 45-60 minutes before using.
- Braeburn, Rome, Jon Gold, Gala, Granny Smith, Honey Crisp, and SweeTango apples are probably your best choice for muffins. I usually reach for Gala apples.
- The best way to store muffins is to line a plastic bag or an airtight container with paper towels. Then place the muffins on top and cover the muffins with a paper towel. You can store them at room temperature for up to 3 days.
- Be sure to completely cool the muffins before freezing, place them single layer in a freezer bag or container. They can be kept for up to 3 months in the freezer. They can be thawed at room temperature.
