Apple Cornbread

A fun twist on traditional cornbread, this moist Apple Cornbread is lightly sweetened with finely grated apple.

Ingredients

  • 3/4 cup cornmeal 127 grams
  • 3/4 cup all purpose flour 100 grams
  • 1 teaspoon baking powder 5 grams
  • 1 teaspoon baking soda 5 grams
  • 1/2 teaspoon salt 3 grams
  • 2 tablespoons sugar 28 grams
  • 1 large egg slightly beaten
  • 3/4 cup whole milk* 6 ounces
  • 3/4 cup finely grated sweet apples 132 grams
  • 2 tablespoons melted butter 1 ounce

Instructions

  1. Preheat oven to 400º Fahrenheit.
  2. In a bowl, combine the corn meal, flour, baking powder, salt and sugar.
  3. Add beaten egg, milk and melted butter.
  4. Stir until well blended.
  5. Fold in the shredded apples.
  6. Pour batter into a greased 8x8 square pan.
  7. Bake for 16-18 minutes, or until the center is cooked through and it is golden brown.
  8. Serve warm.
  9. Store leftovers in an airtight container.
