Apple Cranberry Coleslaw

Ingredients

Slaw mix:
  • 1 small cabbage core removed and shredded
  • 1 large carrot grated
  • ½ large apple – chopped other half goes into dressing
  • ½ cup dried cranberries
  • ½ cup chopped pecan
  • 2 scallions - sliced
Dressing:
  • 1 Tablespoons apple cider vinegar
  • 1 tablespoons honey
  • ½ apple leftover from coleslaw ingredients
  • 1/4 cup mayonnaise
  • 1/4 cup Greek yogurt sour cream can be substituted
  • ¼ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructions

    Cup of Yum
  1. Combine slaw mix ingredients in a large bowl.
  2. In a blender, puree mayonnaise, vinegar, honey and half apple until smooth. Stir in the remaining dressing ingredients. Pour dressing over slaw mix and toss until well combined.
  3. Serve immediately or refrigerate until needed and toss before serving.
