Ingredients

  • 1 cup buttermilk
  • 1 1/2 cups brown sugar , packed
  • 1 egg large
  • 1/2 cup butter melted, unsalted
  • 2 teaspoons vanilla extract
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 apple diced (about 2 cups, baking
Crisp Topping:
  • 1/2 cup flour
  • 1/4 cup granulated sugar
  • 1/4 cup light brown sugar , packed
  • 1/4 teaspoon kosher salt
  • 1/3 cup rolled oats , not instant
  • 4 tablespoons butter diced, cold unsalted

Instructions

  1. Preheat the oven to 325 degrees and spray an 8x4 loaf pan with baking spray.
  2. To your stand mixer (or a large bowl with a hand mixer) add the buttermilk, brown sugar, egg, melted butter, and vanilla extract.
  3. Mix on the lowest speed setting until smooth, about 30 seconds.
  4. Sift together flour, baking soda, salt, cinnamon, and nutmeg and add it to the wet ingredients until just combined on the lowest speed setting.
  5. Fold in the apples, then pour batter into loaf pan.
  6. To make the crisp topping, mash together the flour, sugar, brown sugar, salt, oats, and butter and sprinkle it over the muffin batter.
  7. Bake for 55-60 minutes.
