Apple Crumble Muffin

With flavors of apple and fall spices, plus a tasty streusel topping, these moist and delicious Apple Crumble Muffins will rock your fall!

Ingredients

Muffins:
  • 1 egg
  • ½ cup buttermilk
  • ¼ cup butter melted
  • 1 teaspoon vanilla extract
  • ¾ cup packed brown sugar
  • ¾ cup all-purpose flour
  • ¾ cup whole wheat flour
  • 1 teaspoon cinnamon
  • ¼ teaspoon ground ginger
  • 1/8 teaspoon allspice
  • 1 teaspoon baking soda
  • 1 ½ cups chopped apples 1 med apple = 3/4 c chopped, so about 2-3 apples, depending on size
Topping:
  • ¼ cup packed brown sugar
  • ¼ cup all-purpose flour
  • 2 Tablespoons rolled oats
  • 1 teaspoon ground cinnamon
  • 2 Tablespoons butter melted

Instructions

  1. Preheat the oven to 375 degrees F. Line a 12 cup muffin pan with paper liners.
  2. In a large bowl, whisk together the egg, buttermilk, butter, vanilla, and brown sugar, stirring until the sugar has dissolved.
  3. Use a food processor to chop the apples.
  4. Mix flour, baking soda and spices until well combined. Add to the liquid mix and stir until just combined.
  5. Gently fold in apples. Don’t worry if the mixture seems somewhat “fluffy.”
  6. Use a scoop or tablespoon to fill each muffin cup a generous ¾ full.
  7. To make the topping, stir together brown sugar, flour, rolled oats, and cinnamon in a small bowl. Mix in the melted butter (I used my fingers) until well blended. Sprinkle over the tops of the muffins.
  8. Bake for 25 minutes, or until the tops of the muffins spring back when lightly pressed. Do not overbake.
