Apple fritters with Masala-spiced sugar

Ingredients

  • 1½ cups flour
  • 1 teaspoons baking powder
  • pinch of salt
  • 2 tablespoons sugar
  • 1 cup milk
  • 1 egg
  • 1 tsp vanilla
  • 1 tbsp oil
  • 5 apples peeled and chopped
  • oil for frying
for the spiced sugar
  • 1 cup caster sugar
  • 1-2 tablespoons garam masala
  • 1 teaspoon ground cinnamon
  • ½ tsp ground ginger

Instructions

  1. Heat enough oil to deep-fry the fritters in a saucepan/pot.
  2. In a large bowl, whisk together the flour, baking powder, salt and sugar.
  3. In a separate bowl, whisk together the egg, milk, oil and vanilla.
  4. Whisk the liquid into the dry ingredients then fold in the apples.
  5. Fry spoonfuls of the mixture in the hot oil until golden brown and cooked through.
  6. Drain on paper towels.
  7. Combine the ingredients for the spiced sugar then coat the fritters in the sugar.
  8. Serve immediately.
