Ingredients
- 4 cups mixed greens
- 2 apples, thinly sliced
- 2 pears, thinly sliced
- 1/3 cup goat cheese, crumbled
- 1/2 cup dried cranberries
- 1/2 cup toasted walnuts (*toasting instructions below if necessary)
Vinaigrette
- 3 tablespoons apple cider vinegar
- 1 small shallot, finely diced
- 1 tablespoon honey
- 1/4 cup olive oil
- 1/4 teaspoon salt
Instructions
- Place greens in a large bowl or platter and top with sliced pears, apples, crumbled goat cheese, dried cranberries and walnuts.
- Place the vinegar, shallot, honey, olive oil and salt in a jar or a bowl and shake or whisk until emulsified.
- Drizzle half the vinaigrette over the salad and toss. Continue to add dressing to your preference and serve.

- To toast walnuts: Place in a 350°F oven for 10 minutes until golden and fragrant. Alternatively, place in a sauté pan over medium heat and toast for 4-5 minutes or until golden.

- Make Ahead: If you're wanting to make this salad ahead of time, the walnuts, cranberries and goat cheese can be prepped in advance. I would recommend slicing the apples and pears right before serving to prevent browning. You can make the dressing a week in advance if you want! Just give it a good shake before you use it to re-emulsify everything.
- Add Protein: Feel free to add some protein to this salad to make a more hearty meal. This Lemon Herb Chicken would be perfect!
