Ingredients

Apple Filling
  • 1/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 apple peeled and chopped
  • 1/2 cup pecans chopped
Cream Cheese Filling
  • 9 ounces cream cheese 1 block of cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
APPLE CAKE
  • 2/3 cup white sugar
  • 1/2 cup butter softened
  • 2 egg
  • 2 Tablespoons neutral cooking oil generic cooking oil
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
VANILLA GLAZE
  • 3/4 cup confectioners' sugar
  • 1-1/2 teaspoons milk adjust as needed for best consistency
  • 1/8 teaspoon salt
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Spray with baking spray or grease and flour a 9x5-inch loaf pan.
  2. In a medium bowl combine diced apples, pecans,brown sugar, and cinnamon. Set aside.
  3. In another bowl mix together softened cream cheese, sugar, and vanilla.
  4. In a large bowl beat together the softened butter and white sugar. Add in one egg at a time, while continuing to run the mixer. Mix in oil and vanilla.
  5. In a separate bowl sift together the dry ingredients: flour, baking powder, and salt. Add the wet ingredients (butter, sugar, egg mixture) into the dry ingredients and stir to combine.
  6. Pour half the batter into the prepared loaf pan; Spoon the cream cheese filling on top of the batter, sing a spatula to even out. Add half the apples and half the brown sugar mixture. Lightly pat apple mixture into batter. Pour the remaining batter over apple layer; top with remaining apples and brown sugar mixture. Lightly pat apples into batter.
  7. Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, for about 1 hour to 1 hour 10 minutes.
  8. To make the vanilla glaze, mix all ingredients together in a small bowl. Drizzle on top of cake.
