Apple Pie Oatmeal Cookies

These soft and thick cinnamon apple pie oatmeal cookies taste like Fall in every bite! Loaded with fresh apples, warm spices, and topped with a maple glaze, they’re made with almond flour and are gluten-free, dairy-free, and refined sugar-free. The perfect healthy treat!

Ingredients

Cookies:
  • 1 large egg room temperature
  • ½ cup unsweetened applesauce room temperature
  • 1 ½ teaspoon vanilla extract
  • 3 tablespoon melted coconut oil
  • ½ cup (70g) Coconut Sugar
  • 1 ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 cups (200g) old fashion rolled oats, gluten-free or regular
  • 1 cup (112g) super-fine almond flour, spooned and leveled
  • ½ teaspoon baking soda
  • ⅓ cup diced red apple skinless (¼ inch pieces or smaller)
  • ⅓ cup walnuts or pecans roughly chopped
Maple Icing:
  • ½ cup powdered sugar
  • 1 tablespoon pure maple syrup
  • 1 tablespoon almond milk or water

Instructions

  1. Preheat oven to 350F and line two baking sheets with parchment paper.
  2. In a large mixing bowl, whisk the egg.
  3. Add in unsweetened applesauce, vanilla extract, melted coconut oil, coconut sugar, cinnamon, and salt. Mix with a spatula until fully combined.
  4. Add in rolled oats, almond flour, and baking soda. Gently mix with a spatula until fully combined.
  5. Add in apple pieces and chopped nut of choice.
  6. Using your hands or a cookie dough scooper, form 18 – 20 balls (about 2 Tablespoons each) and evenly space them across the two lined baking sheets. Gently press down to form a cookie shape (these cookies will not spread a lot).
  7. Bake for 13 – 15 minutes, until golden brown. Remove from the oven and let them cool on the sheets for 5 - 10 minutes before transferring to a wire rack.
  8. Meanwhile, prepare icing in a small bowl. Once cookies are cooled, use a fork to drizzle icing across cookies.
  9. Enjoy!

Notes

  • Unsweetened Applesauce: substitute with sweetened applesauce if needed.
  • Coconut Oil: substitute with melted butter or vegan butter if needed.
  • Red Apple: I used honey crisp, but you can use your favorite kind or a green granny smith.
  • Coconut Sugar: substitute with light brown sugar 1 for 1.
  • * Apple cubes cannot be too big, or else cookies will fall apart.
