Apple Pie Oatmeal

Ingredients

  • 4 cups water
  • ¼ teaspoon salt
  • 1 ⅓ cup quick-cooking steel cut oats
  • 2 medium apples peeled and diced
  • ½ cup raisins
  • ½ cup Chopped Pecans
  • 1 teaspoon cinnamon
  • ½ cup brown sugar
  • ½ cup half and half or cream

Instructions

  1. Bring the water and salt to a boil in a medium saucepan over high heat. Whisk in the oatmeal.
  2. Add the apple, raisins, pecans, and cinnamon. Stir well.
  3. Reduce the heat to a simmer and cook 5-6 minutes or until the water is mostly absorbed and the oats are tender.
  4. Serve topped with brown sugar, cream, and diced fresh apples.

Notes

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, warm in a saucepan over medium heat with a splash of milk or water, stirring until smooth, or heat in the microwave in 30-second increments, stirring after each.
  • To freeze, portion into single servings and freeze for up to 2 months. Thaw in the fridge overnight before reheating.
