Apple Pomegranate Salad
Apple Pomegranate Salad features a fresh mix of spring greens and arugula dressed with a slightly sweet vinaigrette containing shallot, honey, orange juice, and white wine vinegar. The salad is topped with crisp apple cubes, toasted pecans, and ruby-red pomegranate seeds for a mix of textures and flavors. Optional blue cheese adds creamy contrast for those who like a richer taste and more complexity.
Ingredients
Vinaigrette
- 1 shallot diced, small
- 1 Tablespoon honey or maple syrup or other sweetener
- 1 Tablespoon orange juice
- 1 Tablespoons white wine vinegar or other quality vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 Tablespoons extra virgin olive oil
Salad
- 8 cups lettuce I like half spring mix, half arugula, mix
- 1 apple cored and cut into 1/2" cubes
- 1/2 cup pomegranate seeds put these on last
- 1/3 cup pecans toasted, halves
- Optional 1/4 cup 2 ounces crumble blue cheese
Instructions
- In a small bowl combine the dressing ingredients and whisk until emulsified.
- Add vinaigrette gradually to the lettuce and toss gently, until the lettuce is well coated. (You may use more or less to taste)
- Top dressed lettuce with cheese (optional), pecans, apple and pomegranate seeds, adding pomegranate seeds last (to they are sure to be visible) Serve immediately.
Notes
- Calorie count provided does not include the optional blue cheese.
- To preserve pomegranate seeds' appearance, add them last when serving.
