Apple Pomegranate Salad
Description
This salad combines a blend of tender spring mix and peppery arugula lightly coated in a vinaigrette made from diced shallot, honey, orange juice, vinegar, salt, pepper, and extra virgin olive oil. The sweet and tangy dressing complements the crisp apple and bright pomegranate seeds, which add bursts of freshness and color. Ingredients
Vinaigrette
- 1 shallot diced, small
- 1 Tablespoon honey or maple syrup or other sweetener
- 1 Tablespoon orange juice
- 1 Tablespoons white wine vinegar or other quality vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 Tablespoons extra virgin olive oil
Salad
- 8 cups lettuce I like half spring mix, half arugula, mix
- 1 apple cored and cut into 1/2" cubes
- 1/2 cup pomegranate seeds put these on last
- 1/3 cup pecans toasted, halves
- Optional 1/4 cup 2 ounces crumble blue cheese
Instructions
- In a small bowl combine the dressing ingredients and whisk until emulsified.
- Add vinaigrette gradually to the lettuce and toss gently, until the lettuce is well coated. (You may use more or less to taste)
- Top dressed lettuce with cheese (optional), pecans, apple and pomegranate seeds, adding pomegranate seeds last (to they are sure to be visible) Serve immediately.
Notes
- Calorie count provided does not include the optional blue cheese.
- To preserve pomegranate seeds' appearance, add them last when serving.
