Ingredients

  • 1 cup applesauce
  • 3/4 cup sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup flour
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350 degrees and line a 12 cup muffin tin with muffin liners.
  2. In a large bowl whisk together the applesauce, sugar, eggs, vegetable oil, and vanilla extract until smooth.
  3. Sift together the flour, whole wheat flour, baking powder, cinnamon, baking soda, nutmeg, and salt.
  4. Add to the bowl with the wet mixture and whisk until just combined.
  5. Scoop the batter just over 3/4 full and bake for 18-20 minutes.
