Applesauce Muffins are the perfect healthy baked goods to start your day. Made with whole wheat flour, cinnamon, nutmeg, and applesauce.

Ingredients
- 1 cup applesauce
- 3/4 cup sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup flour
- 1 cup whole wheat flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350 degrees and line a 12 cup muffin tin with muffin liners.
- In a large bowl whisk together the applesauce, sugar, eggs, vegetable oil, and vanilla extract until smooth.
- Sift together the flour, whole wheat flour, baking powder, cinnamon, baking soda, nutmeg, and salt.
- Add to the bowl with the wet mixture and whisk until just combined.
- Scoop the batter just over 3/4 full and bake for 18-20 minutes.
