Apricot Balls

A four-ingredient recipe that makes a perfect snack or party food.

Ingredients

  • 200 grams dried apricots, chopped
  • 1 ½ cups almond meal
  • 1 ½ cups desiccated coconut
  • 395 gram tin of condensed milk
  • ¾ cup desiccated coconut (extra for rolling)

Instructions

    Cup of Yum
  1. Combine all ingredients, apart from condensed milk and coconut for rolling, in a food processor or chopper. Process or chop for 30 seconds.
  2. Combine with condensed milk.
  3. Spoon out mixture with a tablespoon and roll into balls. Roll in remaining coconut and place on a tray lined with baking paper.
  4. Chill Apricot Balls in fridge for at least a few hours before serving.
