Apricot Balls

A four-ingredient recipe that makes a perfect snack or party food.

Ingredients
- 200 grams dried apricots, chopped
- 1 ½ cups almond meal
- 1 ½ cups desiccated coconut
- 395 gram tin of condensed milk
- ¾ cup desiccated coconut (extra for rolling)
Instructions
- Combine all ingredients, apart from condensed milk and coconut for rolling, in a food processor or chopper. Process or chop for 30 seconds.
- Combine with condensed milk.
- Spoon out mixture with a tablespoon and roll into balls. Roll in remaining coconut and place on a tray lined with baking paper.
- Chill Apricot Balls in fridge for at least a few hours before serving.
