Apricot Ginger Quinoa

Fluffy quiona makes an amazing and healthy side dish. Adding apricots and ginger really kicks this side dish up a notch.

Ingredients

  • 1 cup quinoa
  • ½ cup dried apricots roughly chopped
  • ½ tsp fresh grated ginger
  • salt to taste

Instructions

    Cup of Yum
  1. In a medium saucepan, with a lid, bring 2 cups of water to a boil over high heat. Add quinoa, cover and let simmer over medium heat for 12 minutes. Remove from heat, add chopped apricots and ginger, and fluff lightly with a fork. Return lid and let stand 15 minutes.
  2. Season to taste and serve warm.
