Apricot-Pineapple Pie Recipe

Ingredients

  • 8 ″ double pie crust scratch recipe
  • 1 1/2 c Dried apricots Salt
  • 1 1/2 c water
  • 3 tablespoons butter
  • 6 tablespoons sugar
  • 1 can crushed pineapple 8 oz
  • 1 1/2 tablespoons cornstarch

Instructions

  1. With knife or kitchen shears, cut each apricot into quarters.
  2. Place apricots in a saucepan, add water, bring to boil, cover, and cook over medium heat for 10 minutes.
  3. Add sugar and cook 5 minutes more. Drain, reserving 3/4 cup juice. Set the apricots aside.
  4. Drain crushed pineapple, reserving 1/4 cup juice. Set pineapple aside.
  5. In a mixing bowl, dissolve cornstarch in reserved pineapple juice. Add reserved apricot juice.
  6. Put mixed juices in a saucepan, add a pinch of salt and cook over medium heat until the mixture thickens, stirring continuously.
  7. Mix drained apricots and pineapple thoroughly. Mix with thickened juices and pour into an unbaked pie shell. Dot with butter. Cover with top crust, crimp edges and pierce with a fork.
  8. Bake at 400’F. 25-30 minutes.
  9. Serves 6-8 people.
