Arepa Dominicana

Ingredients

  • 2 cups cornmeal
  • ⅗ cup caster sugar
  • 1 cup evaporated milk
  • 1 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground walnut
  • 3 tablespoons margarine (or butter)
  • 1 handful raisins , optional
  • 1 pinch salt
  • butter (or margarine or oil, for the pan)

Instructions

  1. Preheat the oven to 350 F (175°C).
  2. In a thick-bottomed, non-stick saucepan, combine all the ingredients and place over medium heat, stirring constantly until well blended.
  3. Stir constantly with a wooden spoon, over low to medium heat, until the mixture begins to thicken, about 5 to 10 minutes.
  4. Pour the mixture into a previously greased mold.
  5. Bake for 30 to 40 minutes. The arepa is ready when a stick inserted in the middle comes out clean.
