Ingredients
- 3 tbsp olive oil
- 1 small yellow onion diced
- 4 cloves garlic minced
- 1/2 cup red wine
- 2 tbsp tomato paste
- 1 tsp sugar
- 1 tsp Italian seasoning
- 1 tsp red pepper flakes
- 1/2 tsp kosher salt
- 28 oz Italian tomatoes crushed (See Note 1)
- 6 basil leaves chopped
Serving
- 1/4 cup flat-leaf parsley chopped
- grated pecorino or Parmesan cheese
Instructions
- In a large skillet, heat the oil over a medium-high heat and add the onion and garlic. Sauté for 3 minutes, or until softened.
- Reduce the heat to medium and add the wine, tomato paste, sugar, Italian Seasoning, red pepper flakes and salt. Sauté for 2 minutes.
- Add the tomatoes, stir and simmer until reduced slightly, about 20 minutes.
- Remove from heat, add basil and stir through. Season the sauce with salt if needed. Serve immediately topped with grated pecorino or parmesan cheese and the parsley. Use over any pasta dish or meatballs.

Notes
- I use San Marzano crushed tomatoes or whole (drain is using whole) and crush with my hands into the sauce. Using canned diced tomatoes or a tomato puree just has extra water. If you prefer to use fresh tomatoes, I use Roma (plum) tomatoes, they are meatier and it's best to buy 2 pounds for this recipe.
