Arroz Doce Cremoso - Brazilian Rice Pudding with Condensed Milk
This deliciously creamy and easy-to-make Rice Pudding recipe is perfectly spiced and sweet, thanks to condensed milk. Ingredients
- 1 cup of white rice long grain, unwashed
- 2.5 cups of whole milk
- 1 14oz can of sweet condensed milk
- 5 whole cloves
- 1 vanilla bean or a teaspoon of vanilla extract
- 2 cinnamon sticks
- pinch of salt
- 1/4 cup of heavy cream
- powdered cinnamon for serving optional
Instructions
- Add the rice to a medium pan, cover with 2 cups of water, and bring to a boil over high heat.
- When the water boils, reduce the heat to low, cover and let simmer until the rice is cooked. This should take about 10 minutes. If your rice overcooks, it's OK. This recipe is very forgiving.
- When the rice is cooked, add the sweet condensed milk, the milk, the spices and a pinch of salt, and stir to combine.
- Cook over medium heat until the mixture thickens, about 15-20 minutes, stirring occasionally.
- Add the heavy cream and stir to combine, simmer another minute, and turn off the heat.
- Fish for the whole spices, remove and discard them.
- Serve warm with ground cinnamon, or as is.

Notes
- How to store: Measure the rice pudding into a container and cover with plastic wrap, pressing on top of the rice pudding to avoid a film from forming on top. Let it cool completely and refrigerate.
- You can serve this rice pudding recipe cold or reheat it for a few seconds in the microwave, if desired. If you want to thin it out after refrigerating, you can add a splash of cream or milk. This will alter the sweetness a bit.
