Artichoke and Arugula Flatbread
Artichoke and Arugula Flatbread is an easy recipe that is bright and fresh, loaded with artichokes, feta, and garlic, topped with arugula tossed in a white balsamic dressing. You'll love that this salad pizza comes together in under 15 minutes, too!
Ingredients
Flatbread
- 2 Naan flatbread or homemade flatbread
- 2 teaspoons olive oil
- 2 garlic minced, cloves
- 8-10 artichoke hearts drained and pat dry, roughly chopped, canned
- 6 Tablespoons feta cheese reserve some for garnish, crumbled
Arugula Topping
- 1 lemon zested
- 1 Tablespoon lemon juice
- 1 ½ teaspoons white balsamic vinegar
- 2-3 teaspoons extra virgin olive oil
- Dash Dash red pepper flakes or to taste
- ¼-½ teaspoon black pepper freshly ground
- 2 cups arugula
- sea salt for garnish, flakes
Instructions
- Preheat oven to 350°F. Brush olive oil and minced garlic evenly across both flatbread pieces.
- Top each naan with chopped artichoke hearts and feta crumbles, then bake for 10-12 minutes until edges begin to brown.
- Meanwhile, whisk together lemon zest, lemon juice, white balsamic vinegar, olive oil, red pepper flakes, and freshly ground black pepper. Toss the dressing with arugula.
- Once flatbread is cooked, top with arugula and serve immediately with a sprinkle of flaky sea salt on top. Add additional feta crumbles on top as desired.
Notes
- This recipe can easily be turned into dinner for one, serve up to 4 as an appetizer, or doubled/tripled for more.
