Arugula Pear Salad
Easy recipe for a green salad that is juicy and full of flavors thanks to the amazing dressing.

Ingredients
- 4.4oz (125g) arugula leaves (baby arugula is best)
- 1 pear (or and Apple)
- 5-6 tomatoes (mine were small)
- 1 Small snack cucumber
- ½ red onion
- 1 serving poppy seed salad dressing (see link in the notes)
Instructions
- Rinse arugula and use a sieve to let excess water drip off. Or use a clean towel or paper towels to get rid of excess water. Add to a big salad bowl.
- Core the pear, slice thinly, and add to the arugula.
- Slice the cucumbers into half moons, tomatoes into eighths and the onion into thin strips. Add to the salad.
- Pour the Poppy Seed Dressing for the salad. Toss together and serve.

Notes
- - Poppy Seed Dressing with Honey
- - To make the salad ahead of time: Prepare the dressing up to a day in advance. The day of (or a few hours before), prepare the arugula and slice everything except the tomatoes. Tomatoes should only be sliced and added to salad shortly before serving as they give off a lot of juice.
