  • 8 cups Organic Arugula (Simple Truth)
  • 2 tablespoons Organic Italian Extra Virgin Olive Oil (Simple Truth)
  • 2 tablespoons lemon juice
  • 2 ounces shaved Parmesan cheese
  • salt and pepper to taste
