Arugula Salad with Sun-Dried Tomatoes and Pine Nuts

The fresh bite of this arugula salad with a simple lemon dressing, tangy sun-dried tomatoes, toasted pine nuts, and shaved Parmesan for an easy side salad to accompany any meal.

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 4 cups arugula
  • ½ cup sun-dried tomatoes , drained and roughly chopped
  • ¼ cup Parmesan Cheese , broken or cut into chunks
  • ¼ cup pine nuts , toasted

Instructions

  1. In a large bowl, whisk together the olive oil, lemon juice, honey, and salt and pepper.
  2. Add the arugula to the bowl and toss. Top with the chunks of Parmesan, sun-dried tomatoes, and toasted pine nuts. Add more pepper taste.
