Ingredients

  • 1/4 cup carrot shredded
  • 1/4 cup onion minced
  • 1 tbsp ginger fresh, minced
  • 1 garlic small clove
  • 1 tbsp celery minced
  • 3 tbsp peanut oil (or sesame oil)
  • 3 tbsp rice vinegar
  • 2 tbsp water
  • 1 tbsp tomato paste
  • 2 tsp soy sauce use tamari for gluten-free, low sodium
  • 1 1/2 tsp raw sugar
  • 1 tsp lemon juice
  • salt fresh ground black pepper

Instructions

  1. Place all the ingredient in the blender and process until smooth.
  2. Refrigerate a few hours before using to let the flavors deepen. This gets better the longer it sits.
  3. Serve on your favorite salad greens and enjoy!

Notes

  • Refrigerate the dressing for a few hours before serving to develop deeper flavor.
  • The dressing yields approximately 3/4 cup, suitable for multiple servings.
  • Peanut oil can be substituted with sesame oil for variation in flavor.
