Asian Carrot Ginger Dressing
Description
This dressing combines fresh minced ginger and garlic with shredded carrot, minced onion and celery, balanced by peanut or sesame oil and rice vinegar. Tomato paste adds body and depth, while soy sauce and raw sugar provide savory and sweet elements. Black pepper and lemon juice contribute additional layers of flavor and brightness.
Pureeing all the ingredients in a blender yields a smooth, homogenous dressing. Refrigeration for several hours before serving allows the flavors to meld and intensify. This dressing is especially suited to green salads that can complement its fresh, slightly sweet and tangy profile.
Ingredients
- 1/4 cup carrot shredded
- 1/4 cup onion minced
- 1 tbsp ginger fresh, minced
- 1 garlic small clove
- 1 tbsp celery minced
- 3 tbsp peanut oil (or sesame oil)
- 3 tbsp rice vinegar
- 2 tbsp water
- 1 tbsp tomato paste
- 2 tsp soy sauce use tamari for gluten-free, low sodium
- 1 1/2 tsp raw sugar
- 1 tsp lemon juice

Instructions
- Place all the ingredient in the blender and process until smooth.
- Refrigerate a few hours before using to let the flavors deepen. This gets better the longer it sits.
- Serve on your favorite salad greens and enjoy!
