Asian Chicken Lettuce Wraps

Ingredients

  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 1 pound ground chicken
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tablespoon freshly grated ginger
  • 1/4 cup hoisin sauce
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon Sriracha
  • 1 8-ounce can water chestnuts, drained and diced
  • 2 green onions thinly sliced
  • butter lettuce leaves for serving
  • 1/4 cup crushed peanuts for garnish

Instructions

  1. Heat sesame oil and olive oil in a large skillet over medium-high heat. Add ground chicken and cook until browned, breaking it up with a wooden spoon, about 5 minutes.
  2. Add diced onion, minced garlic, and grated ginger to the skillet. Cook until the onion is translucent, about 3 minutes.
  3. Stir in hoisin sauce, soy sauce, rice vinegar, and sriracha. Cook for another 2 minutes until the sauce is well combined with the chicken.
  4. Add diced water chestnuts and sliced green onions. Stir to combine and cook for an additional 1-2 minutes.
  5. To serve, spoon the chicken mixture into butter lettuce leaves and garnish with crushed peanuts.
