Asian Chicken & Lime Soup

When you want to liven up the classic Asian chicken soup, try this version with lime.

Ingredients

  • 600 ml chicken stock
  • 100 g chicken breast
  • 40 g carrot
  • 30 g celery
  • 30 g Chili pepper
  • 30 g zucchini
  • 40 ml soy sauce
  • 10 g ginger
  • 1 lime
  • 50 g glass noodles

Instructions

  1. Clean the veggies then cut them into julienne strips. Grate the ginger.
  2. Cut the chicken breast into thin strips.
  3. Soak the noodles in hot water for 3-4 minutes, then rinse with cold water.
  4. Heat the stock together with the soy sauce, ginger and lime juice until they start to boil. Then add the chicken and cook for a few minutes until the chicken breast is cooked.
  5. Put the veggies and the noodles in a bowl. Pour in the hot soup. For a slightly spicy flavor, add some thin slices of chili pepper.
