Asian Chicken Salad Lettuce Wraps
These Asian Chicken Salad Lettuce Wraps are flavorful and refreshing. It's a light and satisfying meal that's easy to prepare!
Ingredients
For the Dressing
- ¼ c. rice vinegar
- 2 tsp. soy sauce
- 2 tsp. sesame oil
- 1 T. peanut oil
- 2 T. honey
- 2 tsp. ginger finely minced, fresh
- 1 garlic minced, large clove
- 1 tsp. mustard powder dry
- ¼ tsp. red pepper flakes crushed
- black pepper to taste, Kosher salt and freshly ground

For the Chicken Salad
- 3 c. chicken shredded into bite-size pieces (Use a deli chicken for a quicker meal!, cooked
- 1 c. carrot very thinly sliced
- ½ c. red bell pepper thinly sliced
- 2 green onions thinly sliced
- 3 T. cilantro chopped, fresh
For the Lettuce Wraps
- 1 to 2 lettuce leaves separated, large-leaf, of your choice, heads
- 2 tsp. black sesame seeds
Instructions
- For the Dressing
- Combine vinegar, soy sauce, sesame oil, peanut oil, honey, ginger, garlic, mustard, and red pepper flakes. Season with salt and pepper. Set aside.
- For the Chicken Salad
- Toss together the chicken, carrot, red pepper, green onions, and cilantro. Drizzle with the dressing and toss lightly to coat. Cover and marinate in refrigerator for at least 30 minutes.
- To Assemble the Wraps
- Spoon chicken salad into lettuce leaves and sprinkle with sesame seeds. Serve with your favorite peanut dipping sauce, if desired.
