Ingredients

For the Dressing
  • ¼ c. rice vinegar
  • 2 tsp. soy sauce
  • 2 tsp. sesame oil
  • 1 T. peanut oil
  • 2 T. honey
  • 2 tsp. ginger finely minced, fresh
  • 1 garlic minced, large clove
  • 1 tsp. mustard powder dry
  • ¼ tsp. red pepper flakes crushed
  • black pepper to taste, Kosher salt and freshly ground

For the Chicken Salad
  • 3 c. chicken shredded into bite-size pieces (Use a deli chicken for a quicker meal!, cooked
  • 1 c. carrot very thinly sliced
  • ½ c. red bell pepper thinly sliced
  • 2 green onions thinly sliced
  • 3 T. cilantro chopped, fresh
For the Lettuce Wraps
  • 1 to 2 lettuce leaves separated, large-leaf, of your choice, heads
  • 2 tsp. black sesame seeds

Instructions

  1. For the Dressing
  2. Combine vinegar, soy sauce, sesame oil, peanut oil, honey, ginger, garlic, mustard, and red pepper flakes. Season with salt and pepper. Set aside.
  3. For the Chicken Salad
  4. Toss together the chicken, carrot, red pepper, green onions, and cilantro. Drizzle with the dressing and toss lightly to coat. Cover and marinate in refrigerator for at least 30 minutes.
  5. To Assemble the Wraps
  6. Spoon chicken salad into lettuce leaves and sprinkle with sesame seeds. Serve with your favorite peanut dipping sauce, if desired.
