This fresh and flavorful Asian chopped salad is made with crunchy veggies that are tossed in a creamy, gingery peanut dressing.

Ingredients

  • 4 cups bok choy (chopped)
  • 2 cups cabbage (chopped)
  • 2 cups carrot shredded
  • 1 red bell pepper (seeded and sliced or chopped)
  • 1 cup cilantro (minced)
  • 1 bunch scallions (minced)
  • peanut optional garnish, chopped
Creamy Peanut Vinaigrette
  • ¼ cup peanut butter creamy, natural
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar or lime juice, Nakano Natural brand
  • 1 tablespoon ginger minced, fresh
  • 1 clove garlic (minced)
  • 1 teaspoon chili garlic paste (optional)
  • salt to taste
  • black pepper to taste

Instructions

  1. Start by heating peanut butter in a glass dish in the microwave until thin, about 30 seconds. Place melted peanut butter in the bottom of a large salad bowl and add all remaining vinaigrette ingredients. Whisk well.
  2. Add all of the chopped veggies into the bowl and toss with the dressing until evenly coated. Season with salt and pepper to taste.
