Asian Cucumber and Carrot Slaw

Ingredients

  • 1 large english cucumber
  • 2 medium carrots peeled
  • 2 tbsp rice vinegar
  • 1 tbsp cider vinegar
  • 1 tsp water
  • ½ tsp sugar
  • ½ tsp sesame oil
  • 2 cloves of garlic, minced
  • 2 tsp sesame seeds
  • ¼ cup chopped cilantro

Instructions

  1. Use a julienne peeler or grater to shred the cucumber and carrots into long strips.
  2. Toss the vegetables in a medium bowl, along with both kinds of vinegar, water, sugar, sesame oil, and minced garlic.
  3. Toss to coat evenly. Garnish with sesame seeds and cilantro.
  4. Chill until ready to serve. Best served cold. Enjoy.
