Ingredients

  • 16 oz mini cucumbers or Japanese cucumbers
  • 1 tbsp low sodium soy sauce
  • 1 tsp sugar
  • 2 tsp Korean chili powder
  • 2 tsp Chili oil
  • 2 tsp sesame oil
  • 1 tbsp rice vinegar
  • 2 garlic cloves minced
  • 2 tbsp sesame seeds
  • 1 tbsp roasted peanuts crushed

Instructions

  1. Slice cucumbers into 1/3-inch pieces. Set aside.
  2. Place remaining ingredients into a large bowl. Whisk together until the sugar and salt dissolve.
  3. Add cucumbers to the bowl, toss to combine it all together. Keep refrigerated until ready to serve.
