This 5-minute asian cucumber salad is made with crispy cucumbers, soy sauce, sesame and chili oils, peanuts, and more. Let's get munchin'!

Ingredients
- 16 oz mini cucumbers or Japanese cucumbers
- 1 tbsp low sodium soy sauce
- 1 tsp sugar
- 2 tsp Korean chili powder
- 2 tsp Chili oil
- 2 tsp sesame oil
- 1 tbsp rice vinegar
- 2 garlic cloves minced
- 2 tbsp sesame seeds
- 1 tbsp roasted peanuts crushed
Instructions
- Slice cucumbers into 1/3-inch pieces. Set aside.
- Place remaining ingredients into a large bowl. Whisk together until the sugar and salt dissolve.
- Add cucumbers to the bowl, toss to combine it all together. Keep refrigerated until ready to serve.
