Ingredients

  • 2 lbs chicken breast breast sliced in half, boneless
  • 1/2 cup fish sauce
  • 1/2 cup lime juice
  • 2 tablespoons sugar
  • 4-5 cloves garlic minced
  • 1/2 bunch cilantro chopped, fresh

Instructions

  1. Prep Marinade: Add sugar to a large ziplock plastic bag and then add lime juice and fish sauce. Massage the bag with your hand to dissolve the sugar. Add garlic and cilantro and mix more.
  2. Marinate Chicken: Add chicken breast halves to the bag, seal, and then use your hands to mix the chicken in the marinade. Store in the fridge to marinate for at least 1 hour and up to 24.
  3. Grill: Pre-heat grill. Remove chicken from the bag and cook on a grill (or in a grill pan on medium-high heat) for about 3-4 minutes per side (dependent upon the thickness of the chicken), baste the chicken with the marinade every 60-90 seconds. Cook until the chicken is cooked through and has an internal temperature of at least 165 degrees.
  4. Serve and Enjoy!

Notes

  • Garlic powder can replace minced garlic at 1 teaspoon per 4 cloves.
  • Oyster sauce may substitute fish sauce but add 2 tablespoons vinegar for acidity.
  • Dried cilantro can be used at 1 tablespoon for 1/2 bunch fresh.
  • Chicken can be baked at 400°F with butter and marinade baste for 35 minutes instead of grilling.
