Asian Grilled Chicken
Description
The recipe starts with a marinade combining fish sauce, lime juice, sugar, minced garlic, and chopped cilantro blended to dissolve the sugar before adding the chicken pieces. The marination time varies from at least one hour up to 24 hours, allowing the meat to absorb acidity, saltiness, and aromatic notes.
The chicken halves are grilled over medium-high heat for about 3-4 minutes per side. Frequent basting with marinade keeps the exterior moist and intensifies the flavor, while cooking to an internal temperature of at least 165°F ensures safety. The finishing texture balances a slightly charred exterior with tender, juicy meat inside.
The recipe notes suggest that the chicken can alternatively be baked at 400°F with butter added to the baking dish, producing a similarly flavorful and moist result. Substitutions like garlic powder, oyster sauce, or dried cilantro are acceptable but may slightly change the flavor balance.
Overall, the dish offers a bright, citrusy, and garlicky profile enhanced by fresh herbs and the salty depth of fish sauce. It works well as a grilled entrée for casual dinners or meal prep.
Ingredients
- 2 lbs chicken breast breast sliced in half, boneless
- 1/2 cup fish sauce
- 1/2 cup lime juice
- 2 tablespoons sugar
- 4-5 cloves garlic minced
- 1/2 bunch cilantro chopped, fresh
Instructions
- Prep Marinade: Add sugar to a large ziplock plastic bag and then add lime juice and fish sauce. Massage the bag with your hand to dissolve the sugar. Add garlic and cilantro and mix more.
- Marinate Chicken: Add chicken breast halves to the bag, seal, and then use your hands to mix the chicken in the marinade. Store in the fridge to marinate for at least 1 hour and up to 24.
- Grill: Pre-heat grill. Remove chicken from the bag and cook on a grill (or in a grill pan on medium-high heat) for about 3-4 minutes per side (dependent upon the thickness of the chicken), baste the chicken with the marinade every 60-90 seconds. Cook until the chicken is cooked through and has an internal temperature of at least 165 degrees.
- Serve and Enjoy!
Notes
- Garlic powder can replace minced garlic at 1 teaspoon per 4 cloves.
- Oyster sauce may substitute fish sauce but add 2 tablespoons vinegar for acidity.
- Dried cilantro can be used at 1 tablespoon for 1/2 bunch fresh.
- Chicken can be baked at 400°F with butter and marinade baste for 35 minutes instead of grilling.
