Asian Shaved Ice

Asian Shaved Ice is a refreshing dessert featuring finely shaved ice topped with sweet red beans, diced mangoes and strawberries, cubed grass jelly, and lychee, finished with a drizzle of sweetened condensed milk. Ingredients

  • 4 cups ice (Can use more if you like more shaved ice)
  • 10 pieces strawberries
  • 1 Mango
  • 1 cup red beans or red bean paste
  • 1 cup grass jelly (Homemade or from a can around 540g)
  • 1 can lychee (20 oz, 1 lb 4 oz)
  • 1 cup sweetened condensed milk or more depends your sweetness

  1. Put 1 cup of adzuki beans and 4 cups of water into the instant pot. Cook at high pressure for 45 minutes and natural release. Then, add 1 ¼ cups of sugar and sauté for around 25 minutes or sauté until your desired thickness. Let it cool off. (It's best to make it the night before and refrigerate it.) Or, use a can of sweet red bean paste.
  2. Wash and dice 10 strawberries.
  3. Then, wash and dice 1 mango.
  4. Drain a can of lychee or use fresh lychee.
  5. Cut a cup of grass jelly into cubes. You can use a can of grass jelly or homemade grass jelly.
  6. Next, put 4 cups of ice into the shaved ice machine.
  7. Press the lid and let the machine run. Shaved ice will come out.
  8. You can put shaved ice in the bowl or on the plate.
  9. After that, put ¼ cup of diced strawberries, ¼ cup of diced mango, ¼ cup of sweet red beans, ¼ cup of diced grass jelly, and ¼ cup of canned lychee around the shaved ice.
  10. Lastly, pour ¼ cup of sweet condensed milk over the shaved ice. (Remember to add sweet condensed milk to your sweetness.)

Notes

  • Prepare sweet adzuki beans ahead of time or use canned red bean paste to save time.
  • Grass jelly can be homemade or purchased canned; both work well.
  • Customize fruit toppings by adding your favorite diced fruits beyond mango and strawberries.
  • Use a shaved ice machine for the finest texture; adjust ice amount for preferred serving size.
  • Add sweetened condensed milk gradually to match desired sweetness.
