The beans are prepared by slow cooking adzuki beans with sugar until thickened, or a canned red bean paste can be used for convenience. The ice is shaved finely using a machine to achieve a light, fluffy texture that cools the palate.
The dessert layers soft, sweet red beans with fresh and canned fruits and the delicate, slightly firm grass jelly cubes, delivering a varied texture profile. A drizzle of sweetened condensed milk adds creamy sweetness to unify the flavors. The preparation highlights balance: fruit brightness, bean earthiness, syrupy sweetness, and icy coolness.
Asian Shaved Ice is served cold immediately after assembling, offering a refreshing finish or snack. It can be adapted by switching fruits or adjusting condensed milk amount to taste. Ingredients
- 4 cups ice (Can use more if you like more shaved ice)
- 10 pieces strawberries
- 1 Mango
- 1 cup red beans or red bean paste
- 1 cup grass jelly (Homemade or from a can around 540g)
- 1 can lychee (20 oz, 1 lb 4 oz)
- 1 cup sweetened condensed milk or more depends your sweetness
Instructions
- Put 1 cup of adzuki beans and 4 cups of water into the instant pot. Cook at high pressure for 45 minutes and natural release. Then, add 1 ¼ cups of sugar and sauté for around 25 minutes or sauté until your desired thickness. Let it cool off. (It's best to make it the night before and refrigerate it.) Or, use a can of sweet red bean paste.
- Wash and dice 10 strawberries.
- Then, wash and dice 1 mango.
- Drain a can of lychee or use fresh lychee.
- Cut a cup of grass jelly into cubes. You can use a can of grass jelly or homemade grass jelly.
- Next, put 4 cups of ice into the shaved ice machine.
- Press the lid and let the machine run. Shaved ice will come out.
- You can put shaved ice in the bowl or on the plate.
- After that, put ¼ cup of diced strawberries, ¼ cup of diced mango, ¼ cup of sweet red beans, ¼ cup of diced grass jelly, and ¼ cup of canned lychee around the shaved ice.
- Lastly, pour ¼ cup of sweet condensed milk over the shaved ice. (Remember to add sweet condensed milk to your sweetness.)

- Prepare sweet adzuki beans ahead of time or use canned red bean paste to save time.
- Grass jelly can be homemade or purchased canned; both work well.
- Customize fruit toppings by adding your favorite diced fruits beyond mango and strawberries.
